When cooking in my own home I love to cook healthy, nourishing and tasty meals that the kids will enjoy as well as my wife and I. A family friendly favourite in our house is Devilled Chicken which is simple and quick to make but packed full of flavour.

Devilled Chicken

1 Onion finely diced

1 Carrot finely diced

1 stick of Celery diced

4 Cloves of Garlic crushed

Tablespoon of Capersa

4 Chicken thighs cubed

Cup of Red Wine

2 Tins of Tomatoes

Cup of Parsley and Thyme

Sauté onion, carrot, celery, garlic until soft

Add red wine and reduce by half

Add chicken cook for 2 mins

Add tinned tomatoes, herbs and capers, and simmer for 20 mins

Serve on Rice and garnish with Parsley
